Jonathan Bryant has been appointed the new executive chef across both sister restaurants Peasant and Cabiria at The Barracks. Amongst his resume is time spent at local establishments Anise, Cha Cha Char and Montrachet, with Jonathan using his experience in Australia and overseas to craft a new season European-inspired menu for Cabiria. Plates such as the Slow-braised Lamb Shoulder with Fresh Fig Salad and Blue Cheese Sauce and a Duck Liver Pate with Pedro Ximenez and Peppercorn Jelly will feature alongside the bar’s extensive wine list. Peasant will, too, be sporting a refreshed menu in the not too distant future, courtesy of Jonathon’s new role. more

Craft beer bar Green Beacon Brewing opens at Teneriffe

This weekend sees the much-anticipated opening of Green Beacon Brewing at Teneriffe. Opening its doors on Friday January 25 at 10:00 am, the Helen Street brewery-meets-bar offers a core range of six beers, plus a seasonal rotating creation. A pale ale, kolsch, amber ale, porter, IPA and wheat beer will all be on tap, while the limited-edition LBF112 is the first beer owners Adrian Slaughter and Marc Christmas made on-site. Not falling into a particular style, the LBF112 sits somewhere between a pale ale and an IPA. It was merely supposed to test the system with a heap of hops and grain at its base. But once the lads tasted the first drop, they knew it had to be shared with patrons. more

Roy Choi delivers the Flavour of Los Angeles

In 2008, Kogi BBQ Taco Truck took the new concept of Twitter and the unheard of food fusion of traditional Korean flavours between a Mexican taco and blew minds across Los Angeles. Now an icon of LA street food, Kogi BBQ serves up the kind of deliciousness you wish you could permanently hook up to your veins – tacos, burritos, dogs, quesadillas and sliders of short rib, spicy pork, chicken and tofu. The Short Rib Taco sees double-caramelised Korean barbecue ribs with salsa roja, coriander-onion-lime relish with Nappa Romaine coleslaw tossed in a chilli-soy vinaigrette and nestled between two crisply griddled homemade corn tortillas. West End espresso bar Two Trees is raising funds via Pozible for a cold press delivery bike. Over the summer break, Two Trees was busy pumping out the cold press coffee for patrons, the preservative-free, natural, fairtrade and organic coffee a hit in our city’s heat. To make the cold press, coarsely ground beans are left to soak overnight, the slow process extracting any bitterness and acidity from the coffee. The black coffee is then topped up with Maleny or soy milk, with a smidge of vanilla added for sweetness. Wanting to bring this summer beverage to businesses in West End and Brisbane City, as well as weekend markets, Two Trees is opting for a nomadic bicycle with an attached cold trailer as its mode of transport. A typographically savvy website of food-related content, Should I eat this shit? lets you search for a food and then discover whether it’s good or bad for you. Searching for a simple fruit could bring up a plethora of varieties – fresh, canned, frozen, dried, juiced – the site then telling you all the positives (or negatives) to eating that particular foodstuff. For example, pineapple turned up positive results, but ginger beer is bad for you. Don’t try to search for odd, normally non-edible items like tree bark or nail polish – the site doesn’t have a funny bone. Next time you reach for that three-thirty-itis chocolate hit, ask the site if it’s really what you should be eating. more
