Dîner en Noir
Step into a darkly evocative dining experience this March 30 when Spicers Balfour Hotel celebrates Earth Hour with Dîner en Noir.
Styled as a meandering night market-style soiree, the boutique New Farm hotel will be set up with food stations proffering delectable street-style fare.
Guests are asked to dress in black and will be able to wander through different areas, from the laneway, to the courtyard, veranda and even a dessert station in the rooftop bar.
Head chef Nick Stapleton and his team have committed to run with the Earth Hour theme for the night by using minimal electricity to create dishes such as Lemongrass coal-grilled pork lettuce cups; Potatoes roasted in embers with Roquefort butter; Smoked ocean trout salad with salmon pearls, Shiso and betel leaves; Oysters and clams served with a house-made green and red sriracha, and Coal-roasted pineapple with torched meringue.
Tickets are $199 which includes a glass of Perrier-Jouët on arrival from 6:30 pm and food, wine and beer until 9:00 pm.
