It’s not every day that you get to sample dessert made fresh by an acclaimed pastry chef. Yum Gelato has the privilege of working with one such maestro, who is spearheading the dessert brand’s influx into Brisbane. East Brisbane residents take note – Yum Gelato offers some seriously top-notch ice-cream.

Over his 15-year career as a dedicated pastry chef, Nic Waring has accomplished plenty. After an acclaimed stint at Sydney’s Pier and The Sailing Club, Brisbane’s Darling & Co, a five-star hotel in Bali and jobs at numerous hatted restaurants along Australia’s east coast, Nic sought a change of pace that would give him a chance to further indulge in his (completely understandable) addiction to ice-cream. While living in Noosa, Nic came across Yum Gelato on David Low Way in Coolum Beach, a blossoming gelato dispensary owned and operated by Leanne Southon and her daughter Tallula. Nic was amazed by Leanne’s product and came on board to help take the business to the next level. It wasn’t long before Nic and Leanne found a suitable spot on Lytton Road in East Brisbane to base their foray into the local dessert market, and now Yum Gelato offering it’s range of top-notch gelato, smoothies, acai bowls and juices to the community.

The offering at Yum Gelato is different from typical Italian-style gelatissimo in the sense that it isn’t made from distilled and imported flavours, but rather fresh ingredients blended with full-cream pasteurised milk. Nic has helped refine the flavour selection, adding a unique spin to the offering as only a professional pastry chef can. Yum Gelato’s pistachio flavour is enhanced with the addition of pandan, the vanilla is made using real vanilla beans and salted peanuts are crushed to make the moreish peanut butter choc flavour. Other flavours include lemoncello sorbet, watermelon and wildberry, tropical pavlova and more. Each batch is made fresh at the Coolum location from the best regional produce, and the range is complemented by smoothie bowls, milkshakes, cold-pressed juices, gelato cakes, take home packs and daily dessert specials.
