Improving upon authentic Italian pizza recipes is much like reinventing the wheel – it’s almost impossible. Or so you’d think. Prova Pizzeria is proving all of the naysayers wrong that declare that pizza was perfected long ago, with a seriously impressive menu of wood-fired pies that will have you dreaming of Italy – or at least seriously considering an extended holiday.

Having a local pizza joint is a true luxury, but sometimes we feel like it should be a universal right – especially if you can’t readily travel to get a good slice during the week. Hearing the laments of northsiders crying for a casual yet high-quality eatery to call their own, Carlo Giliberti and Joseph Vecchio decided to act on their dream of opening a pizzeria, securing a spot in Stafford Heights for Prova Pizzeria – an eatery that offers some truly remarkable fare. As a testament to their desire to be one of the best pizza joints in the city, Carlo and Joseph went all out – importing a Stefano Ferraro wood-fire pizza oven and also securing the services of world-renowned pizzaiolo Youssef Ben Touati. For those unfamiliar with competitive pizza making, Youssef is pretty much Michael Phelps – he’s won nearly every award there is to win and has represented Australia and Italy at several Pizza World Championships. He is legit, and so is the pizza.

Prova Pizzeria’s menu features a fresh, fun and ever-changing range of authentic Italian pizzas, with options that you’d be hard pressed to find elsewhere. Carlo, Joseph and Youssef experiment with new concepts, presentations and toppings for red and white base pizzas as well as a jaw-dropping dessert pizza selections. Try this on for size – the NuStella boasts pizza pockets stuffed with Nutella and chocolate ice-cream topping, while the Prova pizza is layered with pumpkin, smoked provola, Italian sausage and a huge helping of burrata. Prova Pizzeria also makes a mean charcuterie board, with small goods sourced from local providores (except for the prosciutto, that’s pure Italian). Diners can also sample a curated range of Italian wines as well as imported beers and aperitivi.
