Gaslight Bistro opens its doors on Brunswick Street

The talented gents behind South Brisbane’s Hoo Ha Bar are branching out, with their second venue Gaslight Bistro opening its doors on Brunswick Street this Friday June 26.

Much like Hoo Ha Bar, Gaslight Bistro has a laid-back, welcoming feel about it. Owners Declan, Mike and Anthony were drawn to the Queenslander-style building for its wide breezy verandah, wanting visitors to feel as though they were kicking back for a meal or drink at a friend’s place. With that in mind, the fit-out has maintained the building’s pressed-metal ceiling, VJ-board walls, Queenslander architraves and glass-panelled bi-fold doors, which open up to create an uninterrupted flow out to the verandah. Ferns spilling from hanging baskets, succulents sprouting from a collection of mismatched ceramics and warm lighting finish off the space, making you feel right at home.

Ex-Gordita chef Travis Cameron has come on board in the kitchen, creating a menu of casual bistro-style small dishes and share plates. Dinner is served seven days, which extends to lunchtime on Thursdays and Fridays, and brunch is served until 3:00 pm on weekends. Menu items are listed simply as ingredients, with the bistro placing a strong focus on seasonal produce. Start with nibbles such as rice puffs and sauerkraut salt or crushed kipflers, shallots and aioli. Share plates include pig jowl, red cabbage, goats milk and radicchio, or salmon, yellow beetroots, saffron broth and witlof. On the brunch menu you’ll find truss tomato, smoked labna, sherry caramel, chervil and toasted rye, or celeriac veloute, slow-poached egg, puffed barley and pickled red onion. You can also stop by Gaslight Bistro for a tipple, with six craft beers on tap and a back bar and cocktail list curated by Hoo Ha’s Lauren Besse.
