Tom Uglys fires up in Burleigh Heads
Housed in the old From Earth and Water restaurant in Burleigh Heads, Tom Uglys wood-fired pizza restaurant is taking the humble Italian classic and turning it into a handmade labour of love and happiness.
The philosophy at Tom Uglys is not revolutionary, essentially it is pizza, dine in or takeaway but it’s the way things are done here that makes all the difference. Tom Uglys uses only the best quality seasonal ingredients and produce that the owner Nicole has cured, fermented and foraged for. The dough is handmade using traditional Neapolitan techniques, as is the velvety mozzarella. It is then shoved into a wood brick-burning oven that smoulders from the open corner and creates that slightly charred flavour that cannot be reproduced by something powered by electricity. The result is a pizza that is bursting with authenticity and flavour.
Be tempted by an array of mouth-watering selections including The Dude, honey lemon free-range chicken with cured bacon, swiss chard, young green garlic, mozzarella, fontina cheese and pecorino, and the Wise Guy, adorned with wood-roasted pork belly, red peppers, provolone, farm house soft brie, smokey barbeque sauce and finished with rocket and apple salad and for the bambinos, there is a selection of 9-inch pizzas.
