After riding the Mexican food wave for the last five years, Stingray Lounge at QT Gold Coast has broadened its culinary horizons with a brand new menu that is designed with amazing local produce and social interaction in mind.

While it’s no secret that we’re fairly (extremely) fond of tacos and all things messy, they can present a challenge when you’re attempting to also juggle a conversation and a cocktail, which is why the new menu at Stingray Lounge is particularly exciting. Created by QT Resort’s new Group Executive Chef Justin Zammit, the entire range is designed to be eaten one handed – think fried chicken sliders, cheeseburger dumplings (no, that’s not a typo, actual cheeseburger-flavoured dumplings!) and amazing mezze boards brimming with cured delights. Whilst remaining true to the venue’s Baja Californian roots, the new menu offers a broader selection of fare including burgers and flat breads through to plates of Hawaiian-inspired tuna poke made with locally sourced yellowfin tuna and micro herbs from the rooftop garden.

Accompanying the new nosh, the bar has also unveiled an extensive new selection of swill that delivers a new twist on old faithfuls. The Weekend Away cocktail, for example, infuses a classic Mojito with house-made lemongrass syrup and mint grown onsite for a little something extra. If it’s been a while in between drinks, swing by and check out the new offering at Stingray Lounge, even if it is just for ten plates of cheeseburger dumplings.
