Anyone who has spent any time in or around Burleigh Heads can attest to the fact that it’s more than a suburb – it’s a lifestyle. Sun-soaked beach walks around the headland, picnics on the hill, sundowners – the reasons to love Burleigh are literally endless. Friends, there is now one more reason to love Burleigh thanks to the arrival of FISHBOWL on Saturday August 6. The Sydney-born eatery is here to revolutionise the concept of fast food with bowls of Japanese-inspired salad made using locally sourced ingredients. Here’s everything you need to know …

We all have that friend that, whenever the word ‘salad’ is mentioned, repeats the tired cliche ‘you don’t make friends with salad’. FISHBOWL is here to put that expression to bed, once and for all. The sprightly salad slinger is on a mission to not only change the perception of salad, but change the entire culture surrounding fast food. While it might seem like a lofty goal, since launching in 2016, Nathan Dalah, Nic Pestalozzi and Casper Ettelson have built a mini-empire, opening 30 stores across New South Wales and Victoria, with another five Queensland-based locations in the pipeline, so it’s pretty clear they’re doing something very very right. At its core, FISHBOWL is more than just a quick feed, the brand champions sustainability and ethical sourcing practices while celebrating the provenance of its fare. The salmon, for example, is exclusively sourced from the world’s most sustainable salmon supplier, which is based in New Zealand. FISHBOWL encourages consumers to make better food-related choices, while simultaneously sparking ongoing conversations around conscious eating.

FISHBOWL’s service model is not too dissimilar to some of its contemporaries – select from the BYOB menu, which invites you to create your desired bowl from scratch, including your choice of base, protein, vegetables, dressings, toppings, and any extra add-ons. If, however, that all feels like a little bit too labour intensive, there’s a selection of six fan favourites, which includes The O.G. (FISHBOWL’s biggest seller, which combines kale, savoy, beets, shallots, edamame, red onion, roasted sesame dressing, seaweed salad, tobiko and crispy shallots with salmon sashimi), Crispy Chicken (poached chicken, kale, red onion, cucumber, beets, radish, roasted sesame dressing, and crispy shallots) and the beef brisket bowl (12-hour braised beef with kale, savoy, carrots, radish, shallots, edamame, lemon olive oil and shoyu dressing, wasabi peas, and wasabi mayo drizzle). Drinks such as cold-pressed juiceKarma organic colacoconut water and miso soup are also available to help wash your bowl down.
