Gold Coast, it’s time to get hot, steamy and a little bit saucy. Now, before this gets awkward, we’ll point out that we’re definitely talking about deliciously soft bao buns. If you’re a lover of the humble bao, then you need to get to know the new kid on the block – Bao Burgers. The on-the-go bao bar has just opened its doors at Capri on Via Roma, and it’s bringing a mouth-watering selection of the popular steamed buns to the table.

Nestled between Edgewater and Pomeroy’s, Bao Burgers is a juicy new addition to Isle of Capri’s bustling Capri on Via Roma hub. The focus here is on fresh, quick and piping-hot baos, which you can grab on the go, or sit down and stay a while as you work your way through the menu. There’s a selection of all-day breakfast baos, with unique combinations like crispy bacon, folded egg and tomato chutney, through to smoked salmon with tamagoyaki egg (Japanese omelette), spinach and orange aioli. The more authentic baos feature fillings like slow-cooked pork belly with green apple coleslaw and hoisin sauce, fried Szechuan chicken with coleslaw and sriracha aioli, and soft shell crab with Asian slaw and wasabi mayo.

There’s also an actual bao ‘burger’, which sees a steamed bun filled with a beef pattie, mustard, cheese, onion and tomato relish. Feeling peckish? Then pair it with a bowl of fries and a gelato thickshake, and you’ll quickly find yourself in bao-burger heaven. Speaking of sides, there’s also spring rolls, loaded fries, tasty chicken wings, and bun-free bao bowls that you can tack on the side for a little extra jazz. For those not so fond of meat, then you’ll be happy to know you can wrap your lips around a bao filled with grilled haloumi and pickled fennel, fried salt-and-pepper mushroom or crispy fried tofu. The menu is still being fine tuned, and we’re told some sweet additions like deep-fried baos with ice-cream and cinnamon baos are not far off. The new Capri on Via Roma venue is Bao Burgers‘ flagship store, and there are plans from owner Shane McDowall (former owner of The Boatshed at Currumbin) to roll out plenty more, which makes us pretty darn excited … and hungry.
