Dragon fruit, or pitaya, is the fruit from the Hylocereus cacti that only blooms at night. Large white fragrant flowers known as ‘moonflower’ or ‘queen of the night’ rely on nocturnal pollinators such as bats, moths or bees for fertilisation. Once the magic happens the result is this wonderfully vibrant dragon fruit.

With most of the flowering happening in January, we are well into dragon fruit season. Byron Bay Green Effect is the producer of an abundance of fresh fruit and vegetables, including dragon fruit, and sets up stalls at the Davies Park Market, Jan Powers Farmers Market New Farm and The Village Markets in Kelvin Grove. Byron Bay Green Effect utilises innovative farming techniques including seawater irrigation and coconut husk soil, as well as growing its produce to classical music and pollination by native bees.

Dragon fruit, in contrast to its vibrant exterior, has a very mild in flavour that is best enjoyed fresh and chilled as the taste is enhanced when cold. If you plan on mixing the fruit with other stronger-flavoured ingredients, choose them wisely so as not to overpower the delicate flavour of the fruit. The mild flavour and beautiful flesh make it great for jams, sorbets, sherbets, smoothies, pastries, especially salads and even on a fruit pizza.
