Brisbane chef represents Australia at Bocuse d’Or

The Sunshine State has cultivated a fine crop of chefs, but now we can claim we also host the cream, with Shannon Kellam being chosen to represent Australia at the Bocuse d’Or World Final in France.

Locals who have had the pleasure of sitting down to a meal at The Brisbane Club can now boast they’ve eaten the creations of one of the world’s leading chefs. Shannon Kellam, executive chef at the Brisbane City dining institution, strutted his culinary stuff at the South Bank Institute of Technology last week and was hand-picked to represent Australia in the prestigious Bocuse d’Or World Final in Lyon, France.

Shannon will compete in the culinary equivalent of the Olympic Games for the second time in his career, preparing and cooking a myriad of dishes in front of a live audience. The celebrated chef has rattled the pans in some of Brisbane’s best restaurants, including Wilson’s Boathouse, Il Centro and Raphael’s. All eyes will be on Shannon and his culinary creations as he commences training in the lead-up to the international event.
