Ink Gin is made in small, hand-numbered batches by Husk Plantation Distillery on the banks of the Tweed River in Northern New South Wales. The unusual hue is the result of an innovative step in the distillation process that steeps the gin in a floral infusion for 24-hours before it is bottled by hand. Apart from giving the gin its trademark colour, the butterfly pea flower petal ink is pH sensitive so it actually changes from blue to pale pink when mixed with tonic water, transforming your simple G&T into an up-market cocktail. Beyond pretty colours, Ink Gin’s greatest virtue is its subtle astringency, which leaves the palate crisp and clean allowing the citrus and floral notes of the other botanicals to shine for a long, satisfying finish.

Husk Plantation Distillery was established in 2012 as a paddock-to-bottle agricole rum distillery and has been producing premium rums and developing its innovative dry gin ever since. Ink Gin is its first product release and they will be releasing the first barrel of Husk Virgin Cane Rum from the 2012 harvest later this year.
