After six long years, Elements of Byron Resort & Spa has sprung to life in Byron Bay bringing with it some enticing new dining options. Each of the individual venues have one thing in common, they all focus on delivering a delightful, interactive and shared dining experience.

If you believe that food is little more than a necessity for maintaining life, you’re doing it wrong. Food is a gift to be enjoyed, shared, appreciated and savoured and the very act of eating it is a celebration. Partake in the celebration of eating at Elements of Byron’s new restaurants Graze, Barefoot Kiosk, Drift Bar and Mixed Dozen Restaurant, which is expected to open mid-2016. The venue’s Executive Chef Justin Dingle-Garciyya has spent years travelling and celebrating food all around the world and has returned to Australia to share the culinary fruits of his nomadic adventures with patrons.

At Graze, breakfast is not just breakfast, it’s a lush, sensory affair while lunch is an invitation to linger and soak in the stunning view with a cocktail in hand. Evenings are vibrant, upbeat and sophisticated with innovative tasting plates and share platters presenting an impeccable fusion of fresh local flavours. Afterwards, mosey on down to Drift Bar to enjoy an elementally inspired cocktail (or mocktail) featuring local native produce. While they all sound mighty appetising, it’s hard to go past The Wanderer, a blend of Australian gin and native botanicals shaken with local jam and presented with edible wild flowers. Stroll in off the beach, where Belongil Creek meets the ocean, and surrender to Elements of Byron’s seductive barefoot luxury.
