Newcomer Belvedere Stonemill brings cheese-wheel gnocchi and authentic Italian bites to Burleigh

While you’re usually met with the fresh, salty scent of the sea, the alluring aroma of authentic Italian cooking has been permeating the air in Burleigh Heads since the recent arrival of day-and-night trattoria, Belvedere Stonemill.

The new Italian eatery has taken the space beneath Swell Resort formerly occupied by smokehouse Buffalo Sears, and is the handiwork of chef Fabio Rocco Ricciardi and his wife (and resident pasta-making extraordinaire), Frederica Scalambra. After spending the last four years as the in-house chef for the Ferrari team in the Formula 1 racing circuit, Fabio has set his sights on bringing the traditional methods and rustic flavours of his native Modena (in northern Italy) to the shores of the Gold Coast. You’ll see Fabio in the kitchen heading the team of chefs, while Frederica is stationed in full view of diners, passionately making every single piece of pasta by hand. Both the pasta and pizza play huge roles in Belvedere’s menu – everything from the stuffed tortellini to the spaghetti and the pizza bases are crafted daily from unbleached, organic grains that have been stone milled to create an earthy, rustic flour that is naturally lower in gluten and higher in protein.

Pasta lovers can indulge in dishes like the gnocchi in porcini-mushroom sauce served in a baby wheel of pecorino cheese, or the fresh seafood spaghetti in a rich Napoletana sauce with prawns, mussels, scallops, crab and calamari. Meanwhile the pizza menu dances around the classics, from a traditional Margherita through to a simple mozzarella with hot Italian salami. As for the mains, think dishes like eight-hour slow-cooked porchetta served with Tuscan cabbage and roast potatoes, and whole roasted squid stuffed with gluten-free bread crumbs, spicy chorizo, mussels, cherry tomatoes and olives. You’ll also find a selection of Italian beers and wines to sip, and if you’ve left room at the end, the house-made cannoli will fill the gap.
