Pizza and pasta enthusiasts need to have Belvedere Stonemill on their radar. Located beneath Swell Resort, the authentic Italian eatery is the handiwork of Italian-born Fabio Rocco Ricciardi, who was previously the chef for the Ferrari team in the Formula 1 racing circuit. Both the pasta and pizza play huge roles in Belvedere’s menu – everything from the stuffed tortellini to the spaghetti and the pizza bases are crafted daily from unbleached, organic grains that have been stone milled to create an earthy, rustic flour that is naturally lower in gluten and higher in protein. Pasta lovers can indulge in dishes like the gnocchi in porcini-mushroom sauce served in a baby wheel of pecorino cheese, while pizza fiends can munch on classics like a traditional Margherita or a simple mozzarella with hot Italian salami. As for the mains, think dishes like eight-hour slow-cooked porchetta served with Tuscan cabbage and roast potatoes, and whole roasted squid stuffed with gluten-free bread crumbs, spicy chorizo, mussels, cherry tomatoes and olives. You’ll also find a selection of Italian beers and wines to sip, and if you’ve left room at the end, the house-made cannoli will fill the gap.
