Located on the sixth floor of the luxurious Hilton Brisbane is where you’ll discover esteemed dining institution, Vintaged Bar + Grill. If you’ve never been to this inner-city gem, you’re in for a treat! The venue been a stalwart of Brisbane’s culinary scene thanks to its experienced kitchen staff, stellar service, ambient atmosphere, and perhaps most importantly, fine cuisine created using fresh, seasonal produce. Taking things up a notch is the brand-new – and mouth-watering – menu, which has been perfected by executive chef Dario Fiorino. You can expect a selection of exquisite dishes including a premium range of Australian beef featuring wagyu, in-house dry-aged steaks, and sustainably sourced seafood – all cooked on an open grill and balanced with Mediterranean aromas. A native Milanese, Dario’s menu is influenced by Italy, Spain and France – so your taste buds will be taken on quite the gastronomic journey. Meander in at midday and kick off a long lunch with some salivation-inducing entrees like beef fillet with light mayonnaise and Worcestershire sauce, fried capers and baby rocket, and Berkshire pork belly with black pudding and caramelised apple puree. Cure your carnivore cravings with the 500-g beef rump with sauteed Brussels sprouts, pan-fried guanciale and parmesan potato or the Vintaged burger with a wagyu-beef patty, bacon, cheese, tomato, lettuce and caramelised onions, served with a side of fries.

Dinner is equally delicious, beginning with antipasti delights like beef tartare with capers, mustard, cornichons, tabasco and crispy bread and chargrilled octopus with Spanish chorizo and potato salad. On the grill you’ll find a 300-g wagyu sirloin with a marble score of 6+, 200-g eye fillet, 400-g 45-day dry-age prime rib, and 300-g Black Angus scotch fillet with a marble score of 5+. These meaty heroes are served with bone marrow, pangrattato, lemon, extra-virgin olive oil and your selection of mustards. Those wanting to go all out can order the Vintage Signature Sharing For Two, with your choice of 2-kg grain-fed Australian beef tomahawk, 1.2-kg slow-cooked beef short rib, 1-kg roasted pork loin (with garlic, rosemary, fennel, herbs and wrapped in pork belly) or the Carne Mista – a platter of chef Dario’s favourite cuts. These tantalising picks are carved at the table and served with a selection of mustards and a sauce of your choice. Desserts are decadent, to say the least, with the likes of pistachio semifreddo (pressed eclat d’or, pistachio mousseline and amarena cherry gelato), blackcurrant and lychee composition (raspberry sponge, lychee insert, and amatika crispy) and textures of chocolate Valrhona (chocolate tart, flexi ganache, bahibe aero, black sambuca and ice-cream) all standouts that are sure to send your senses into ecstasy. 

If you’re feeling thirsty, fret not, your options are practically endless when it comes to what you will be sipping on. The bar is stocked with premium liquors and countless wines, which are sourced from boutique wineries in Australia, New Zealand and further afar. The best part? Vintaged Bar + Grill has extended its operating hours, giving diners more chance to lap up its luscious meals and libations. The impressive locale is now open seven days a week for breakfast and five days a week for lunch (from Monday to Friday), making mid-week business lunches oh-so delicious. A sumptuous dinner spread awaits hungry folk from Tuesday to Saturday, so that’s date night sorted too.
