When Nishan Phillips left the cold of Melbourne for Brisbane, he brought with him more than 15 years of hospitality experience. After settling in Brisbane’s north, Nishan set about putting his talents to good use by opening a vibrant and welcoming cafe in Stafford Heights – The Colour Nine. Like the name indicates, The Colour Nine is an irreverent eatery that isn’t restricting itself with a style or focus – unless that focus is offering good food and coffee. With a single menu of dishes available all day, The Colour Nine draws inspiration from worldly travels including Sri Lankan dahl, cured King Fish tacos, slow cooked Sichuan lamb and tri-coloured warm quinoa. Coffee lovers have plenty to sample, with stellar beans sourced from Beancraft. The Colour Nine serves two blends, a single origin, one decaf variety and a cold brew with beans sourced from Costa Rica. Not a coffee fan? No worries – there is upwards of 16 teas on offer in addition to four chais and milkshakes. Gluten-free and vegan eaters are catered for upon request. Got a dietary requirement?
