Adelita Wine Bar

The bayside suburb of Wynnum is growing, with a host of hospitality concepts turning the neighbourhood into a dining hot spot. Adelita Wine Bar, a vino-centric joint owned and operated by Chris Hollingsworth, opened in Wynnum in November 2022, showing off a striking upscale look and a menu of food and drink to boot. Here, Chris is looking to elevate the standard of neighbourhood bars in the area, offering an approachable but slightly elevated offering headlined by a diverse wine list. Adelita’s kitchen is helmed by executive chef Esca Khoo, a Borneo-born chef whose resume includes stints at Noma Australia, Dinner by Heston Blumenthal, and, most recently, as head chef at hatted Melbourne restaurant Miss Mi. Esca, alongside head chef Noah Soowon have created a full menu of fare that Chris describes as ‘Modern Australian with a contemporary twist’, incorporating native-Australian ingredients to create a range of small plates and shareable large portions including mackerel escabeche with garlic sauce and hash browns, and kangaroo tartare with sunflower cream, yolk and crisps. Chris has linked up with Clui Design and Bullfrog Commercial for the bar’s design and fit-out, honing in on an aesthetic that maximises its waterfront proximity, establishing a chic and classic look that is still approachable.
