As much as we love tucking into tacos and munching on mounds of nachos, the Gold Coast has its fair share of moreish Mexican joints. Transforming the former Mex Cartel on the Lower Gold Coast Highway in Burleigh Heads is Blaire’s Bistro, which this week debuts a brand-new culinary direction and fresh new look. There’s a refreshing simplicity that underpins Blaire’s Bistro. While the current trajectory on the Gold Coast hurtles towards bigger and fancier, the newly renovated space is envisioned as a laid-back neighbourhood noshery, the kind you can stroll down on a whim with the whole family in tow. Serving some your favourite comfort foods – think fish and chips, racks of meltingly tender ribs smothered in sticky sauce, burgers and crisp schnitzels – Blaire’s Bistro delivers a globally inspired menu peppered with elevated pub-style classics.

The menu opens with entrees of garlic focaccia, Sicilian prawns bathed in white wine butter sauce and ‘old school’ oysters in your choice of Kilpatrick or mornay, to name just a few. Moving on to mains, Blaire’s dishes up ‘proper’ fish and chips (if you know, you know) alongside crumbed schnitzels (hot tip, upgrade to parmigiana for $4), four burgers (BBQ Beef, The Schnity, a vegetarian option and the decadent Philly Cheese Steak), steak and frites topped with rich cafe de Paris butter, and house-made spinach and ricotta ravioli.

The hero, however, are the house-baked baby back ribs. Available in half rack, full rack or the meat-sweat inducing ‘Big Daddy’, the succulent ribs are smothered in your choice of bourbon BBQ, spicy Korean glaze, cajun maple or honey soy sauce. There’s really no delicate way to eat ribs – just dive in and savour every delicious, messy bite. Side your slab with a baked potato or apple slaw with fries, and you have all of the ingredients for the most delicious food coma.

To complement the food, Blaire’s also offers a well-rounded selection of libations, including eight cocktails that range from refreshing cucumber martinis through to boozy iced-caramel lattes laced with peanut butter whiskey. Rounding out the list are craft beers, wines and plenty of spirits.
