The Gold Coast’s culinary scene is thriving with amazing new restaurants popping up all over this fine city of ours. Behind every great restaurant is a brilliant chef or team of chefs working their magic for your eating enjoyment. For something a little bit different, we asked the winners and runner ups of the 2016 EAT/drink Awards – sponsored by Aperol Spritz – to give us a sneak peek into the secret lives of their top chefs. For our first instalment of The Chefs Series, we picked the brains of five chefs to see what they like to cook at home when the pressure is off.

Sam Cruize – Easy Street Diner
“Anything over an open fire. The pleasure of building, lighting and tending to the coals in order to get them just right then grilling any type of meat on the bone. Perhaps a charred smoked paprika and jalapeno chicken on the hot coals or a lamb shoulder smothered in olive oil, garlic and lemon zest slow roasted for hours. So delicious!”

Michael Simpson – Bonita Bonita
“At home my shelves are full of preserved lemons, homemade mustards, pickles, relishes, hot sauces, loaves of bread, bottles of kombucha, fresh cheese and tubs of live yoghurt. This is what I like to cook and make, occasionally I even throw them together to form a proper meal.”

James Brooks – Elk Espresso
“My favourite thing to cook at home would have to be Singapore chilli crab. Catching and preparing your own crabs is great fun, and it always goes down well with dinner guests (especially the wife).”

Jo Lowe – Tribeca NYC
“It’s very hard to just pick a few things but I do love slow-cooked pork belly infused with garlic, ginger and special herbs served with homemade gnocchi.”

Ray Choi – Mamasan Kitchen + Bar
“Any kind of noodles, I love cooking noodles! Some of my specialities are Korean handmade noodles with clam soup, Japanese ramen and Vietnamese pho beef rice noodle soup. I also enjoying cooking carbonara with fettuccine and spaghetti bolognese at home.”
