Neil Perry shakes up the menu at Saké Restaurant & Bar
After the announcement of its official name change in late February, Rockpool Dining Group is rapidly making waves in Brisbane. In addition to opening a slew of bars and eateries across our fine city in the coming months, the group is shaking up the offering of its restaurants that we are already so familiar with, starting with hatted Brisbane City restaurant Saké.
If you’re a lover of Saké Restaurant & Bar don’t fear – your beloved Eagle Street restaurant isn’t going anywhere. As of this Friday March 17, however, a number of new dishes will be added to the Japanese eatery’s menu, courtesy of renowned chef and Rockpool Dining Group’s chief brand and culinary officer, Neil Perry. Drawing inspiration from a recent trip to Japan, Neil has crafted culinary creations that balance Saké’s contemporary approach to Japanese cuisine with ‘washoku’ – traditional Japanese food.
As in all of his restaurants, Neil has placed a strong emphasis on the highest quality local ingredients and sustainable practices, working closely with a number of Australia’s finest producers. From this Friday you’ll be able to sink your chopsticks into the likes of Glacier 51 Toothfish, which is glazed in miso marinade, wrapped in bamboo leaf, roasted, unfurled in front of guests and drizzled with miso butter, or soy-marinated scampi tartare dotted with roe, sprinkled with togarashi and served on a konbu rice cracker, among others. New seasonal cocktails will complement the new menu items – we can’t help our mouths watering over the thought of the Japanese Shoemaker, marrying Amontillado sherry with rich loganberry jam and yuzu, the perfect combination of sweet and sour to cut through the savoury umami of Neil’s dishes.
