Acclaimed Hobart restaurant Fico is hosting a pop-up dinner at Gum Bistro

Next month, the brains behind one of Tasmania’s most-beloved eateries will be venturing north to host a one-night-only pop-up. Oskar Rossi and Federica Andrisani – the chefs and co-owners of esteemed Hobart venue Fico – will be taking over the Gum Bistro kitchen on Thursday July 25 to turn out a menu of spuntini and pasta plates. This is one night of dining not to be missed!

During the height of Tasmania’s brisk winter, Oskar Rossi and Federica Andrisani close their cherished restaurant Fico for a spell, striking out in search of a warmer climate. This year, they’ll be heading to the Sunshine State to defrost and, while they’re in Brisbane, the talented tandem will be linking up with Gum Bistro’s Lachlan Matheson and Phil Poussart for a collaborative aperitivo-inspired dinner, taking place on Thursday July 25.

While the entirely a la carte menu will be finalised closer to the date, we’ve been told to expect a selection of antipasti plates, pastas, risotto and a dessert. Though Oskar and Federica will be raiding our local vegetable and seafood markets to find the best of what’s in season, we’ve also heard they might be bringing a few choice ingredients from interstate – think fresh pasta, some veggies and, if we’re lucky, some venison. As one would expect, the Gum Bistro crew will be pouring some sensational wines throughout the night.
