Flame on – City Winery is bringing back Fireside as an omakase-inspired degustation

City Winery’s famed monthly flame-licked feast Fireside is making its return next month, but not as you knew it. On Friday September 20, the Wandoo Street institution will be lighting the embers to serve an immersive dining experience inspired by Japanese omakase. Expect a surprise menu of morsels kissed by fire and smoke every month, served alongside a sublime selection of City Winery’s own vino.

After a refresh and a revamp, City Winery’s Fireside dinner is back. The multi-course fine dining experience has been tweaked to give guests a whole new kind of epicurean experience.

When it came to overhauling Fireside’s style, City Winery head chef Kyran Henry adopted an approach inspired by Japanese omakase – a form of fine-dining that leaves the experience wholly in the hands of the chef, who crafts a unique menu from the best produce available in the moment. Omakase offerings also typically feature creative quirks and some unexpected extras, which means that no two omakase experiences are ever exactly the same.

“I always really liked the Fireside concept at City Winery and I wanted to bring that back, but with my own spin,” explains Kyran. “I want this to be as much about the whole experience as it is the food, to have a refined but welcoming service and also chuck in a few surprises.”

Bookings are currently available for dates in September, October and November, with each monthly Fireside event set to boast its own menu shaped by flame and smoke. September’s event will see guests sit down in The Gallery (City Winery’s intimate dining space), where they’ll enjoy a welcome drink and amuse bouche before tucking into a seven-course menu. Chefs will join the guests periodically to speak about the meal, which will include the likes of smoked goats cheese and spring vegetable tart, smoked duck with mirepoix consommé, wagyu tartare with chive, smoked hen’s egg yolk and burnt onion oil, and Moreton Bay bug with blood orange, celeriac and fermented macadamia.

The Fireside package is available for $159 per person and comes with either paired wines, or a non-alcoholic pairing option. Head to the City Winery website to lock in a spot.
