Wineology


Wineology is a new-age wine bar, bottle shop and tapas spot that looks to cater to those interested in learning more about wine, not just drinking it. It’s doing this with banks of enomatic wine-dispensing machines, which pour tasters of 96 wines from Australia and abroad, giving guests the chance to sample a wide range of vino before committing to a drop. In addition to the enomatic serves, an expanded range of bottles tallying in the hundreds offers gallons of vino to enjoy on site or to take home alongside a selection of beer and spirits, while a clutch of super-premium wines (dispensed via Coravin) are available by the glass. The kitchen turns out a menu of tapas-style dishes designed to pair with Wineology’s sommelier-selected highlights, including cinghiale ravioli with spinach, leek hay, basil, house-made ricotta, herb oil and wild boar ragu. The 38-seater space itself boasts a chic aesthetic envisioned by local interior-design superstars Clui Design, with a material palette featuring marble and leather contrasting with pops of blush-pink to create a sense of comfortable luxury.
