Paddington’s 224 Given Terrace (formerly Montrachet and Margo) was given a new lease on live in March 2019 when NOTA opened within the storied space. The eatery comes from rising young chefs Sebastiaan de Kort and Kevin Docherty, who both felt that Brisbane was in need of a produce-driven dining option that was both uncomplicated and affordable. While this is each chef’s first restaurant, both have had experience in renowned kitchens both internationally and in Brisbane – Kevin completed his apprenticeship under Philip Johnson at e’cco bistro and has worked with Michelin-starred chefs across the globe, while Sebastiaan completed his apprenticeship under the guidance of Javier Codina at Moda and worked in France before opening deli and kitchen The Cheese Pleaser in 2017. With its name derived from the Latin phrase for ‘familiar kitchen’, Nota is just that – a place where the chefs can get creative with flavourful simple-yet-satisfying dishes, making the diners feel right at home. Sebastiaan and Kevin have liaised with reliable growers to source a tremendous array of produce, parlaying rustic ingredients into a selection of heart-warming dishes designed to share. The duo has nailed down a menu that runs 21 dishes deep, starting with tasty snacks and progressing through fish, meat and vegetable-based dishes plus an array of desserts to close.  As for the drinks, NOTA stocks a balanced range of wines, craft beers, and classic and signature cocktails.
