MAYA – Opening Soon
The Coats Group – the hospitality crew behind Il Molo in Bulimba and The Jetty in South Bank – is currently revitalising its crown jewel, Fortitude Valley’s Eleven Rooftop Bar. Come July, Eleven will become MAYA – a pop-up Mexican-inspired concept that will transform the chic tapas and cocktail bar into a breezy open-air eatery inspired by Mexico’s gorgeous coastal regions. The team is currently in the thick of some renovations, revitalising key spaces to better suit a dining experience for 90 patrons. A new seating area and freshly refurbished rooftop courtyard will be where most of the action takes place, with an all-white aesthetic broken up with desert cacti, stone, marble and timber, plus furnishings in the form of oversized lounges and intimate booths. Both the fit-out and share-style menu draw inspiration from Mexico’s coastal regions, spotlighting colour, fresh produce and light flavours – think spicy tuna tostadas, snapper tacos and wagyu-steak asado, all of which will be kissed by flame over open grills. As one would hope, the bar will also be amply stocked with artisanal tequilas (filtering into margaritas, naturally) as well as a list of mezcal cocktails, plus we’ve heard word that an after-hours menu will be on the cards. The pop-up is expected to last until the end of the year at least, with the potential to become permanent depending on the crowd response.
