Hervé’s Restaurant and Bar
Craft’d Grounds – Albion’s multifaceted dining hub – grew in 2022. Hervé’s Restaurant and Bar open at Craft’d Grounds in May, showing off a French-inspired offering crafted by a team of accomplished culinary artists. The venue’s namesake is operator Hervé Dudognon, who is vast array of skills as a sommelier and front-of-house maestro to work with his own restaurant. Although his name is on the door, Hervé is not going it alone. In addition to his wife Cristina and business partner David Lyons, Hervé has also recruited Chris and Alex Norman as the restaurant’s executive chef and executive pastry chef, respectively, tapping into their experience working in numerous hatted and Michelin-starred restaurants in Australia and abroad. The team is offering fare that is relaxed but world class, with a drinks list featuring wine sourced from environmentally conscious makers. Byron Bay-based interior designer Katie Cameron has spearheaded the restaurant’s spatial styling, instilling a sense of luxury, romance and theatre into the space with an aesthetic that respect’s the building’s design. Hervé’s boasts an open kitchen (with a visible woodfired oven) as well as a palette comprised of timber and terrazzo tones, textured fabrics and soft lighting.
