In September 2022, the team behind upscale Fortitude Valley Italian ristorante and wine bar Rosmarino opened Etna – a premium pizzeria and wine bar showcasing an elevated take on the approachable pizza-centric eatery. The space, which sits next to cakery BROOKI, boasts room for roughly 38 guests inside and room for another 12 or so in Rosmarino’s shared courtyard space. Etna’s kitchen crew is using a six-year-old sourdough starter, wholemeal flour and a 48-hour fermentation process for its pizza dough, which is crowned with an assortment of gourmet toppings before being cooked in a brand-new Moretti Forni electric pizza oven. The offering is headlined by pizza, of course, with four classic options joined by six modern variations and four special options. The menu also includes a stellar list of small plates (fritto misto, Italian ‘Opera’ burrata with truffle honey, sliced to order Galloni 30-month speck and wagyu bresaola), two pasta dishes (pasta allo scoglio and fusilli al pesto) and one main – a 350-g duck cotoletta As for ETNA’s wine list, expect an array of natural drops that match well with pizza – think orange wines and pet nats.
