ETNA – Opening Soon


In September, the team behind upscale Fortitude Valley Italian ristorante and wine bar Rosmarino will open a sibling concept on the Marshall Street-facing side of the Stewart & Hemmant building. ETNA will be a premium pizzeria and wine bar showcasing an elevated take on the approachable pizza-centric eatery. The space, which will sit next to fellow soon-to-open cakery BROOKI, will boast room for roughly 38 guests inside and room for another 12 or so in Rosmarino’s shared courtyard space. ETNA’s kitchen crew will be experimenting with different flours for its pizza bases, which will be crowned with an assortment of gourmet toppings prepped in the Rosmarino kitchen before being lovingly cooked in a brand-new pizza oven, specially selected to bring out the flavours of the flours. Roughly 12–15 pizzas are expected to be available on the finished menu alongside three rotating specials, while a small selection of antipasti and two to three pasta dishes will flesh out the overall offering. As for ETNA’s wine list, expect an array of natural drops that match well with pizza – think chilled and light reds, orange wines and pet nats. Though the fit-out is yet to commence, the ETNA team is eager to create an earthy and rustic space boasting darker tones more conducive to moody intimacy.
