If you’re a regular at Miami Marketta, you might have noticed Mamma, a pop-up that has been winning over pizza lovers with its woodfired Neapolitan-style slices since late 2022. With the market success, chef Martin Lapierre and his French-trained friend Antoine Picard opened a permanent spot in Miami next to Grounded on Kiers Road. Instead of replicating the food truck menu, they specialised in Detroit-style pizza, known for its thick crust and rectangular shape, popularized in the mid-20th century at Buddy’s Rendezvous. Martin, a dough expert, perfected Mamma’s recipe with a 30 to 36-hour dough rest for a light and fluffy texture, while Antoine adapted French culinary techniques to Australian tastes. The menu features 10 pizza varieties, from classic Margherita to Mediterranean-inspired options like Spicy One and La French, along with entrees and sides such as Caesar salad and grilled eggplant parmigiana. Everything at Mamma is made from scratch, including the tomato sauce and hand-cut French fries.
