Everything is better when bubbles are involved, that’s just a fact. This sentiment rings especially true for Zachary and Laura Guertin, the owners of Chirn Park’s brand-new cheesecakery, Basque. The beautiful new spot walks the line between cake shop and wine store that also sells filter coffee. Although the idea of a ‘burnt’ cheesecake may initially raise a few eyebrows, the reality is anything but bitter. Quite the opposite, in fact. There’s no biscuit base to speak of, rather, the heat creates its own kind of crust. The inside is every bit as sweet and satisfying as you would want in a piece of cheesecake. When it comes to the bubbles, Zachary has put his years in hospitality to excellent use and has compiled a concise list of drops that range from Australian pet-nats to prosecco and even some Spanish cava thrown in for good measure. Of course, there are also a couple of French Champagnes to round out the selection. For those who aren’t fond of bubbles, there’s filter black coffee, which is almost as smooth as the cheesecake accompaniment. There’s a handful of seats available, for those who prefer to sit and savour, however the majority of the business is directed towards the delivery side of things where people can order online and collect from the shop. The space can also be hired out for hen’s parties, corporate gigs, birthdays, you name it. With a mantra of ‘make it special’, Basque makes every day a reason to celebrate.
