As the son of a shoemaker and a restaurant owner, former animator and current professional knifemaker Todd Neale was raised to respect both of the passions that fuelled his parents’ careers – and now kitchens across the country are reaping the benefits in the form of Doveton Fletcher knives.
Todd’s past life as a graphic designer is what largely inspired the creation of Doveton Fletcher. For his 12 years in the animation industry, his work largely involved evaluating shape, colour, materials, functionality, user experience and even fashion – skills that he believed would transfer rather well into the world of knifemaking. With this confidence instilled, Todd and his family made the serious tree-change from Brooklyn to Castlemaine where Doveton Fletcher was created. The label has been turning out some of the finest knives ever since, fusing design and functionality to create the perfect blade.
The Doveton Fletcher workshop produces bespoke handcrafted cutting tools for both serious cooks and stylish chefs. The brand’s range is comprised of two different styles of knife, both coming with a stunning range of handle colour and material combinations. Both styles of blade are made from the world’s best carbon and stainless steels, as well as combining unique Australian native timber (mostly Tasmanian) with modern synthetic materials for the handles. The gyuto knife is an all-rounder, combining Japanese and French design principles to create a tool that goes the distance, while the paring knife is smaller and more suited to delicate and precise jobs. However, at the end of the day each knife is multi-purpose – it just depends on your preferences in the kitchen. For those who like to store their knives in style (and safety), the brand also makes slick leather knife rolls.
