A brand-new cocktail bar with its own gin-making school is set to open inside the old Metro Arts Theatre building on Edward Street on Saturday December 3. The Gin School team will be crossing the river to open inside the laneway locale, which will boast steampunk-inspired light fixtures, gothic black-velvet damask and a solid copper bar, from which the team will dispense beer, wine and a 30-strong list of carefully crafted cocktails. Much like Gin School’s West End location, this inner-city site will be equipped with miniature copper stills for gin-making classes. Guests will be able to craft their dream spirit from a selection of 180 botanicals. At the end of the class, each attendee will walk away with a bottle of gin tailored to their own tastes, with a personalised label for that extra-special touch.
