Those regularly venturing down the quiet streets of Newstead after dark will be well acquainted with the friendly face of resident bar manager Carl Rhodes at beer den Tippler’s Tap. Having worked in bars and restaurants about town for around 14 years, Carl took his love of good beer to the next level with a stint at old craft beer shop Nectar in West End. With an appetite for sourcing esoteric drops from microbreweries worldwide, Carl caught the eye of Chicago native Brian Kennedy, who had a dream to open a relaxed craft beer bar with southern-style comfort food. Tippler’s Tap opened in September last year, with Carl finding a spot behind the bar. Since then, the culture and community around the craft beer movement has swelled as small breweries and bars continue to open. The Weekend Edition caught up with Carl to talk weekend rituals.

How do you like to start your weekend?
Coffee and a bike ride is a good start.

What’s your favourite thing to do on a Saturday morning?

Spending a bit of time with my family is definitely my favourite thing, followed by my ride into work.

How do you like to unwind?
Getting out of town and going camping for a few days is ideal, but usually gardening does the trick. I like riding my bike to unwind too. And watching a good movie or playing Battleship is also good.

What are your essentials for a well-spent weekend?
Family time is the most important thing for me on the weekend. A family walk with our dogs is good. Gardening and riding my bicycle are other things I enjoy.

What’s something you’ve been meaning to do on the weekend but haven’t got around to yet?
Painting our fence is something I’ve been meaning to do for about a year now. I’ll get to it one day.

What’s your favourite thing to do on a Sunday evening?
Dinner with my family, watching a movie and going to bed early is the ticket.

What are you looking forward to next weekend?
Like most weekends, it’s a few days off work and spending time with my family that excites me.

What are you reading at the moment?
Nothing, I’m not much of a reader.

What inspires you?
Being able to provide a happy and healthy life for my family.

What was your childhood dream?
I honestly can’t recall having one.

What has been your greatest achievement?
Getting married to my lovely wife and having a child with her are definitely the two greatest things I’ve done.

What is success to you?
Being content.

What are your words of wisdom?
Ride hard. Wear a helmet.

Only a local would know … there’s a great pizza joint in Morningside called Mama Ferraris.
