For this instalment of The Edibles we documented the soft chocolate pudding at Harveys Bar and Bistro in Fortitude Valley. 

A signature dessert of the bistro, this soft chocolate pudding comes paired with passionfruit curd, white chocolate sorbet and raspberries. This final repast of an evening graze presents the diner with a play on textures – the smooth curd contrasting the spongey raspberries, crunchy crumble, cool sorbet and hot molten centre of the pudding. A white chocolate crumble and dehydrated raspberries pepper the plate, offering both concentrated and fresh finishes and flavours of the fruit, while the smooth rich sorbet contrasts the tang of passionfruit. Known for crafting a menu that respects the seasons by using fresh local produce, Harveys has sourced Queensland raspberries and passionfruit for this winter dessert. Hidden beneath the dusting of sugar, the pudding conceals a molten ganache centre – smash the plump surface without delay to allow the decadence to pour from its place of hiding.
