Owned and operated by chef Jimmy Williams, who moved to Brisbane from Melbourne in 2016, has sought out the perfect opportunity to merge fine-dining service with a warm and welcome atmosphere and sublime cafe fare. Within a freshly renovated space boasting raw timber touches and copper fixtures, The Brunswick Project serves unique modern Australian-inspired fare such as baked eggs served with parsley bread crumbs, spicy beans and lemon, smoked salmon with creme fraiche, baby chat potatoes and poached eggs, twice-cooked brioche French toast and more. Coffee drinkers will be able to sip on brew from award-winning Melbourne-based Rosso Roasting Co, while wine and beer is on offer for boozy brunches.
