The Wellington in East Brisbane welcomed an authentic Japanese eatery to its midst when Shunsai Restaurant opened at the tail-end of July 2018. Japanese chef Shun Mori chose to open his own restaurant after stints cooking at the Japanese embassy in Switzerland and at award-winning restaurants in Sydney and Brisbane. Shunsai Restaurant focuses on fine dining, offering an intimate experience with Japanese dishes made with fresh, locally sourced and in-season ingredients. Specialising in kaiseki in particular, Shun will be delivering a degustation-style collection of small dishes, intricately assembled to highlight flavour, colour and seasonality. In addition to the eats, Shunsai also serves up a range of sake to pair with your meal.
