Salon de Co

Spring Hill’s Ovolo Inchcolm (previously The New Inchcolm Hotel & Suites) opened its new signature restaurant in April 2018 after choosing to close Thomson’s Reserve, which once sat in the front entry of the hotel. The former Thomson’s space was converted into a bar and lounge area, with new restaurant, Salon de Co, residing in the back of the building. Salon de Co embraces the 1930s-era building’s rich history, drawing further inspiration from the surrounding decades of the 20s and 40s. Chef Anthony Hales has remained as executive chef, crafting a menu of wholesome modern Australian share dishes with Asian influences. Reservations are recommended.
