Ruby, My Dear

Japanese vinyl bars and jazz cafes form the inspirational basis for Ruby, My Dear – the latest concept from Happy Fat Group, the team behind Red Hook and COPPA. Now open in the former home of Drum Dining in Newstead, Ruby, My Dear is a place for music lovers to come in and enjoy a curated array of sounds played on wax or by live jam bands. DJs spin records from an assortment of genres, including jazz, disco, funk, soul, hip-hop and lofi, while groups of musicians will gather to perform on the first Tuesday of every month. Ruby, My Dear’s all-encompassing ethos extends to the bar, which will eschew dedicated specialties in favour of a malleable offering that can cater to most tastes. A substantial wine list will be available to browse alongside a solid cocktail selection, a clutch of sake and beer on tap and in the fridge. The kitchen will turn out a menu of fun fare inspired by Japanese izakaya-style eats. Expect the likes of shime saba (pickled mackerel with wasabi and soy), wagyu tataki with garlic crisps from the raw menu, mayo-laced pork katsu sandos, panko-prawn ebi buns, koji-rubbed wagyu rumps and miso-roasted bone marrow udon.
