In September 2018, River Quay’s Stoke Bar closed its doors for good. There was no time to commiserate, however, as the closure was only to facilitate a million-dollar transformation of the space, resulting in the creation of STOKEBAR Q. The redesign further capitalised on the bar’s absolute riverfront location, extending the boardwalk experience with increased wrap-around lounge seating, booths, intimate spaces and a private lounge. Executive chef Richard Ousby crafted an all-new menu for STOKEBAR Q, split into hand and fork options, including the likes of salted cod fritters with sheeps milk yoghurt, mozzarella and bolognaise jaffles, and pork cotoletta with fennel and caper slaw. Cocktail connoisseur Becki Parker has come on board as master mixologist, concocting a ‘Library of Libations’ showcasing quintessential Queensland flavours.
