Both the ribs and pulled pork shoulder marinate overnight after being rubbed with Pit Boss American’s signature spice blend – the pork shoulder is also injected with apple juice for extra juicy flavour. The team then smokes the meat low and slow in its in-house smoker, using a blend of apple, hickory and mesquite wood chips. Ribs and pork are served with fries and house-made slaw, or those after a true American barbecue feast can opt for a pack, which also includes cornbread. Pit Boss American also dishes up Southern fried chicken and wings, buffalo wings, and a selection of fries – think chilli cheese fries topped with house-made Texas chilli, melted cheese and a side of sour cream – and other sides. Share a couple of slices of pie for dessert, choosing from pumpkin, key lime, peanut butter and cherry.
