Just over a year after its first takeover, pop-up restaurant Mongrel found a permanent location in Milton. Self-described flavour pimps Henry Wu, Gabriel Escalante-Gafau and Annie Bingley spent 13 months taking over restaurants around town (including Naïm, Betty’s and King Arthur) with their punchy menus before finally securing a bricks-and-mortar space on Park Road. The bar and eatery tantalises tastebuds with Peruvian-inspired flavours, drawing on chef Gabriel’s roots, with the menu featuring pop-up favourites and new dishes. Out of the box items include lamb-brain croquettes, ox-tongue tacos, octopus and piquillo pepper tequenos, pork-belly chicharron and fish and octopus ceviche. Henry has crafted a bar offering of boutique labels, favouring artisan Australian breweries, wineries and distilleries for Mongrel’s drinks selection.
