Inspired by the weather, Brisbane’s inventive breakfast scene and supporting local industry, Mairi MacKinnon has paired up with coffee doyen Josh Russell of Cup Specialty Coffee to create Merriweather – a fresh pocket-like cafe situated on the corner of Russell and Cordelia Streets in South Brisbane. The design is a collaborative effort, with the cafe enlisting some local talents to handcraft the space. On the food front, Merriweather is focusing on simple food done well, keeping the breakfast menu small to start and delivering new lunch offerings each day. With supporting local farmers and producers embedded in the cafe’s ethos, Merriweather is sourcing its produce through Food Connect, with future plans to grow herbs and vegetables on the rooftop of the South Brisbane building as well. The bread and pastries are sourced from Chouquette, while the luscious cakes, muffins, tarts, cookies and scones are all made on-site. Josh has crafted a special Merriweather blend of coffee for the cafe, which is set to change with the season.
