Hotel Carrington
Hotel Carrington is a warm and welcoming public house located on the fringe of Fortitude Valley’s central party precinct. The venue is the brainchild of Peter Stark – the owner of The Montague Hotel in West End, who secured the former home of Sabotage Social and an adjoining space in Carrington Chambers to transform into Hotel Carrington’s multi-faceted interior. Significant renovations highlight the building’s existing raw exposed brick, pressed-metal ceilings and polished concrete – not to mention opening up new spaces. With a capacity for 300 patrons, The Carrington Hotel boasts two beer gardens, an on-site bottle shop and an adjoining sports bar. The offering is headlined by boozy lunches, a signature cocktail and vodka program and a menu of modern Australian eats. Brad Cochrane (former co-owner of Sabotage Social) is overseeing the bar, which pours craft beers, global wines and specialty spirits, while executive chef Craig Watson has curated Hotel Carrington’s menu. Using a custom-built Texas smoker, the Carrington’s kitchen will dish out whiskey-infused wagyu sirloins, smoked barbecue lamb rump, baked brie with crusty bread, popcorn pork with tomato salsa, share-style platters and much more.
