Brisbane City’s dining scene scored an exciting new entrant when Exhibition Restaurant opened on Edward Street in June 2022. The brainchild of Tim Scott (one of the founders of Fortitude Valley’s Joy), Exhibition looks to offer a sense of escapism and an experience that’s more than just the simple act of eating and drinking. Exhibition boasts room for 24 diners (as well as a ten-seat wine-bar offshoot) with colours, textures, layout and vibe designed and curated by Tim himself. When it comes to Exhibition’s culinary direction, Tim has drawn inspiration from Japanese-style kaiseki, a traditional multi-course offering that typically offers a balanced combination of taste, texture and colour. At Exhibition, Tim will serve dishes in a set-menu format, where each course will consist of small dishes featuring one hero item and several smaller dishes intended to be eaten as accompaniment or as complimentary bites. As for beverages, expect a list encompassing 50 wines and sake from small producers, plus a concise cocktail selection utilising interesting spirits and ingredients shared with the kitchen for continuity between style and flavour.
