Eterna is the newest restaurant concept from the crew behind Salt Meats Cheese – a moody, late-night eatery that can be found tucked away off Ann Street in the heart of Fortitude Valley (the former home of LONgTIME). The restaurant uses the rustic bones of the venue to evoke the trendy environs of chic Manhattan hotspots, using it as a stage for a menu of Roman-inspired fare. Fresh pasta forms the cornerstone of much of the menu, with dishes such as rigatoni alla carbonara, tonnarello cacio e pepe and bucatini all’amatriciana made using fresh house-made pasta. Smaller dishes such as suppli al telefono (think arancini, but street-food style) and mains like rosemary-marinated chargrilled lamb chops, pollo alla Romana and slow-roasted porchetta also feature. Eterna’s libation list boasts 130 local and Italian wines, plus a clutch of classic cocktails. The restaurant looks to target both the mid-week dinner and knock-offs crowd as well as the night owls, opening until midnight from Tuesday to Thursday, and until 1:00 am on Fridays and Saturdays (the kitchen will close around 11:00 pm).
