Nick Pinn has never been one to rest on his laurels. As if the restaurateur didn’t have enough happening – he’s the man responsible for Malt DiningMalt PierMalt TradersVaquero and On The Side – in mind-2017 he partnered with long-time friend Paul Hoffmann (ex-executive chef at Cru Bar and At Sixes and Sevens) to open Drum in Newstead. Positioned under Mirvac’s Unison development, the restaurant and bar is the perfect place to act as a local meeting house, with Paul creating a menu of modern no-fuss dishes with European influences. Dishes include the likes of linguine with bay bug meat, chilli, gari, parmesan and lime, cauliflower croquettes with leeks, gruyere and mustard, and fish fingers with pine nut crumb. The bar also brings a lot to the table, with eight signature cocktails, five spritz varieties, four espresso martini concoctions, several carafes of shared cocktails available alongside a great list of wines and beer.
