The Alliance Hotel


In 2023, the team behind Frog’s Hollow Saloon took over custodianship of The Alliance Hotel in Spring Hill. The seasoned crew has wasted no time bringing the heritage-listed 1880s icon but to peak operational capacity, overhauling the bar offering and reshaping the kitchen offering to boot. The menu now features small plates like white anchovies on brioche toast, Scotch eggs, fried pickles and steak tartare. A selection of mains hits all the must-have pub-food beats – schnitties, steaks, wagyu burgers, and fish and chips – but you’ll also spy Cumberland pork rope sausages with mash and house-made gravy, and mussels with white wine, garlic and parsley. On the bar front, the beer range is now mostly craft, while a six-strong cocktail list features riffs on classics. The wine list is still being updated, but expect more high-end, classic-style vino to feature.
