Paddington welcomed a new watering hole in November 2015 with the opening of Darling & Co on Given Terrace. Darling & Co sits in the building previously occupied by Iceworks, just a stone’s throw from Suncorp Stadium and boasts a mix of substantial dining options and bar snacks over its split levels, with a open-plan restaurant with booths and communal dining and long bar, as well as two separate function spaces. Head chef Guiliano Melluso (formerly of Bucci) has helped put together dishes for breakfast, lunch and dinner that are clean, fresh, simply presented and easy to eat. Banh mi sliders, roasted spitchcock, cone Bay barramundi, steak frites and 12 hour low and slow Milly Hill lamb shoulder are just some of the exquisite dishes on offer, while the bar serves up a range of local and craft beers, boutique Australian and international wines plus a selection of Australian and international spirits and classic cocktails.
