In the wake of the news that Paul McGivern had sold his hatted restaurant The Wolfe, long-time fans soon discovered that Paul was already working on a new restaurant concept. Corella is inspired by the idea of uniting the community around a central meeting point, and eschews the notion of ‘special occasion’ dining in favour of delivering an eatery that can be enjoyed by locals nearly any day of the week. The venue sits at the base of Aria Property’s new The Drapery development in Woolloongabba. Paul is overseeing the 50-seater venue from front of house and behind the scenes, with chef Callum Grey running the kitchen and refining the ever-changing menu. Much like Paul’s other venues, Corella focuses on simple, modern and produce-driven dishes, such as pumpkin raviolo with ricotta, pepita and tarragon, John Dory with witlof and saffron sauce, and Warrigal green risotto paired with stracciatella, croutons and olive crumb. Corella’s wine selection will be ever changing, with new and interesting varietals slotted in to reflect the fare.
