Under the helm of executive chef Song Yao Su, the menu is packed with toothsome morsels drawing inspiration from his globe-trotting career that spans tenures from Hong Kong to Las Vegas. The new venue’s name draws inspiration from the term “Uncle” in Chinese tradition that indicates respect – a fitting moniker for a dining locale led by a chef with more than 35 years of experience.

As you take a seat within the jewel-hued dining room, get set to devour an array of Cantonese favourites created using locally sourced ingredients – with a particular focus on the abundant seafood of our region. Delights of the oceanic kind are sustainably sourced, such as Queensland grouper, barramundi, abalone and coral trout. Ready your chopsticks for delicacies including Chef Song’s signature 24-hour-marinated Peking duck that’s roasted and then carved at the table, or much-loved traditional Cantonese dishes with some tasty tweaks like siu mai made with Australian pork and prawn before being topped with locally sourced abalone. There is also a focus on tea at Uncle Su, with a dedicated tea connoisseur available to provide insight into the traditions of tea and to guide guests through the elaborate tea offering – along with a selection of rare teas served as part of a traditional Chinese ritual.
